Galería Canalejas announces the long-awaited gastronomic proposal that will form part of this exclusive space in the heart of Madrid.. Over an area of 4,000 square metres, the Food Hall of Galeria Canalejas is conceived as a unique gastronomic experience in the city, with 14 restaurants of different styles and nationalitiesThe concepts that stand out are the concepts that renowned national and international chefs have been designed exclusively for this new gastronomic icon of the capital.

Gastronomic proposals

The chef Julián Mármol, Michelin-starred since 2019 with his restaurant Yugo The Bunker, has designed not one but two completely new restaurant concepts that will see the light of day in the Food Hall of Galería Canalejas from October. The first of these, Monchis, will be a true crossroads between Japan and Mexico, where creativity and excellence in techniques and products are paramount. It will be the first Mexican omakase bar - "put yourself in the chef's hands" in Japanese - with a Japanese philosophy in Europe and the second in the world. The ember will be the common thread of the chef's second restaurant, The Eightwhere he will showcase his unique signature touch by redefining popular formats such as burgers and sandwiches.

For its part, Rubén Arnanzone of the youngest Spanish chefs to win a Michelin star, will bring the essence of nouvelle Castilian cuisine to the capital with the opening of 19.86 by Rubén Arnanz. A dynamic and cosmopolitan boutique restaurant where his haute cuisine recipes will stimulate all the senses. It will also have an exclusive space for a small number of diners where they can enjoy Arnanz's cuisine live.

Among the head chefs will be Michelin-starred Julián Mármol and Rubén Arnanz.

 Mad Gourmets is another of the completely new concepts that have been created for the Food Hall of Galería Canalejas. In its more than 650 square metres, it will have 20 spaces with different specialities, ranging from typical Spanish tapas to the latest international gastronomic trends. The presence of the John Barrita concept and its famous creator is a highlight. John Torresthe baker who has turned sourdough and fermentation into an art and who has become an essential ingredient on the tables of the most important Michelin-starred restaurants in the world. In addition, visitors to Mad Gourmets at Galería Canalejas will be able to enjoy the constant leisure proposals that will coexist with the best gastronomy.

The successful concept created by Patricia Carbajosa at KaButoKaji travels to the heart of the capital with the long-awaited return to Madrid of the renowned chef Andrés Madrigal as gastronomic director. This perfect tandem will open two restaurants in the Food Hall of Galería Canalejas where fusion becomes the soul of the cuisine. On the one hand, a renewed KaButoKaji in which the chef invites us on a fascinating journey between traditional Japanese gastronomy and its encounter with the essence of the Mediterranean. Klub Bar Kitchen will offer a new concept of cocktail and dim-sum bar where diners will be able to enjoy a casual and relaxed atmosphere, through suggestive cocktails in which we will discover the most authentic Madrigal.

Spanish gastronomy is internationally known and praised for its richness and variety, characteristics that reflect the diversity of cultures we have in the country. For this reason, the Food Hall of Galería Canalejas could not miss a wide sample of authentic national treasures such as Iberian cured meats, cold meats, cheeses and the best tasting of Spanish wineries at D ́Bellotathe wide variety of rice dishes and paellas of the iconic Madrid rice restaurant. St JamesThe restaurant Garelos, synonymous with quality, dedication and good service, or the modernised vision of the most authentic traditional Galician gastronomy in Garelos, a native of Betanzos. Nor could we miss one of the best representatives of Spanish confectionery, El GolosoThe company, which has been making artisan pastries and sweets in its workshops in Tarancón since 1963, travels outside its native Mancha so that visitors to the Food Hall of Galería Canalejas can taste and take home the sweetest bites of traditional artisan pastries.

The wildest side of Japanese gastronomy comes from the restaurant Wild, where the tradition and mysticism of Japanese cuisine is painted with flavours and techniques from all corners of the world. The Venezuelan chef Fermín Azkuewith a long career in the best restaurants in Venezuela, Panama and major European capitals, will be responsible for fusing the flavours and techniques of the most exotic places on the planet in what they are already calling "the Salvaje experience".

From Italy comes Davanti Ristorantea tribute to Italian tradition in the capital, which will continue to highlight the preparation of fresh pasta fatta in casa, the iconic dishes of Italian cuisine, and a piccolo mercato where visitors can buy the best products from the country of the boot. Also from Italy will be the Amorino ice cream parlour with its representation of authentic Italian gelato made with 100% natural ingredients.

The French firm that has reinvented savoir faire in the world of oysters, Amélie, will also be present in the Food Hall of Galería Canalejas with a space where the tasting of the world's most awarded oysters will be accompanied by a rigorous selection of wines and champagne.
